Ingredients
- 1 medium yellow potato
- ¼ cup shredded cheese, divided
- ½ avocado, sliced
- 1 egg
- 1 tsp everything bagel seasoning, optional (or substitute with salt & pepper)
- Nate’s Hot Honey
Directions
Boil potato for 20 minutes, or until fork tender.
Preheat waffle iron and grease if not non-stick. Once pre-heated, sprinkle half the cheese over the surface of the griddle, place the potato on top and press down. Once cooked, lift lid and add the remaining cheese. Press down, and cook until cheese is crispy.
Meanwhile, fry egg to your liking. Place potato waffle onto a plate, and top with sliced avocado, seasoning of choice and fried egg. Drizzle with Nate’s Hot Honey, and enjoy!
