Directions

Line a large baking sheet with parchment paper.

In a medium bowl, combine peanut butter with honey until smooth. Add oat flour or almond flour and mix until combined. It will be a soft cookie dough-like texture.

Using a tablespoon, scoop batter and roll into balls. Wet hands slightly if getting too sticky. Arrange balls on a parchment-lined baking sheet and place in freezer for about 20 minutes. Remove from freezer and re-roll into perfect balls and place in fridge while you melt chocolate. If using almond flour, it may take another 15 minutes for them to harden.

In a small heatproof bowl, microwave chocolate and coconut oil in 30-second intervals, stirring between each, until melted and smooth. Transfer chocolate to a deep glass so you can dip easily!

Using a toothpick, poke into the chilled ball and dip into melted chocolate, leaving a small circle without chocolate on top. Scrape the bottom of ball along the top of the glass to get rid of excess chocolate. Place back onto baking sheet. Smooth over toothpick hole if you’d like.

Place in the fridge for 1 more hour. Store in the fridge and enjoy!
